Salmon Chowder



I made this tonight and it is awesome delicious!!! I found the recipe on http://www.allrecipes.com/

Only some minor changes did I make on this one. I used only 1/2 cup of cheese, fresh salmon , fresh garlic, and I omitted the salt. Easy and quick!

3 tablespoons butter
3/4 cup chopped onion
1/2 cup chopped celery
1 teaspoon garlic powder
2 cups diced potatoes
2 carrots, diced
2 cups chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried dill weed
2 cans salmon
1 can evaporated milk
1 can creamed corn
1/2 pound cheddar cheese, shredded

Melt butter in a large pot over medium heat. Saute onion, celery, and garlic powder until onions are tender. Stir in potatoes, carrots, broth, salt, pepper, and dill. Bring to a boil, and reduce heat. Cover, and simmer 20 minutes.

Stir in salmon, evaporated milk, corn, and cheese. Cook until heated through.

Di, It is so good, I am making it again today. I am going to try it with skim evaporated milk today, to make it just a bit healthier. I also used wild salmon, which is considered to be the healthiest salmon. Wild salmon does have a different flavor, but I love it. A couple ladies suggested using liquid smoke also. I did not, afraid of too much of the bottled smoke flavor.

Mary, thank so much for visiting my blog and for you so kind words. I LOVE your blog! And it appears you are a serious sewer. I do a lot of sewing too, however, haven't done so much lately. I have too many hobbies and have a hard time finding enough time to do them all.

As I told you on your blog, Portia thinks she is queen.:) And she was named from Portia in Merchant of Venice. I love Merchant of Venice, and Shakespeare.

Gina, I love salmon patties and I make them quite often. I loved this chowder so much that I made it again last night. I did add a little more chicken broth and used 2% milk, it was even better. Also I used chicken instead of salmon, not as good with the chicken...good but different. I love salmon so that is my preference.

It is delicious! I am too embarrassed to tell you how many times I have made it since finding the recipe. But each time I have changed it a bit, added something else. I have it down to a pretty healthy soup. I only use 1/4 cup cheese, more is too much I think. I also use 2% milk now and with these changes, I like it better. Let me know if you try it.:)

This is the one recipe I'm going to try! It sounds easy and simple and I need more fish recipes. We eat fish every Friday and I have a hard time coming up with something.
