YUMMY

Time was not on my side tonight, had to make a late dinner and did not want to go to the store. I had seen this recipe a while back on Pinterest and had an apple that needed to be used...so I whipped up some pancake batter, peeled, cored and sliced the apple, dipped it in pancake batter and...found a new love for the crazy times. These would be great for kids to have as a snack, they're good enough to eat without any thing on them. Going to try them with different apples to find the one I like best, at least when I do make them again. You could make this much more balanced, but since I wasn't feeling that balanced, it seem to be the pefect fit. :)

Jo, that's what I did, used a lonely apple. :) I ended up with pancake butter, no problem, just cooked up some pancakes. :)
