Puff Pastry Vegetarian Pizza


It was a good day; after finding a recipe on Sweet Paul’s Blog, I knew I had to make it…and I did. It was so delicious that I will be making it again tomorrow night. I followed the way EASY directions exactly, except…I added a couple of things I needed to use up and some of my fresh herbs, which are in abundance right now - thyme, oregano, rosemary, and at the end of cooking time, some basil dipped in olive oil. Added a couple of chopped green onions and sun dried tomatoes, a few black olives…this was so simple…and too DELICIOUS to be so simple. The puff pastry is now my new favorite pizza crust, tender and flaky. This tasted much more like the European Pizza I used to eat in Germany, no tomato sauce. I love recipes like this, you can use what you have, add extras that you like.

Hi Sixpence,

Your pizza looks yummy and a good way to use up with you have in the fridge. I make a tart with oven roasted tomatoes on puff pastry ( a French recipe ) and that is really good.

I can't stand to throw food out, so I am always changing a recipe a bit. I make my own pastry, but I have NEVER been brave enough to make puff pastry. It is so time-consuming that I would be furious if I spent all that time and it didn't turn out. :) I wanted to add a couple other veggies tonight, and will tomorrow night now that I know how it cooks. Maybe tomorrow I will add the fresh basil after cooking the pizza and not cook the basil at all. Even though it was in the oven only one-two minutes, it took away some of the flavor of the basil. I love the strong flavor from fresh basil, so will try it this way tomorrow night. I could have inhaled this it was so yummy.:)

Wow...this looks delicious! I am having lunch and it consists of cottage cheese and an orange. Boy, do I want that pizza : )

Ladycat, I LOVE cottage cheese with tomatoes or fruit. A great summer lunch.:)
Ah, it is so easy to miss comments and post - don't worry about it. I miss postings all the time. Some days I have more time for the computer than other days, therefore, I miss a lot. I try to visit my favorites on a regular basis, but I don't always do so great at that.
