Meatless Chili On A Cold Friday Night

Baby it's cold outside...and Chili is just the right fix.
I'm not a vegetarian, but I do not eat very much meat at all, most of the time, I use it more for flavoring. But I have found a meatless chili recipe that is good enough that I may 'never' make chili with meat in it again. This recipe is packed with protein and does not scrimp on flavor - it is perfect in my opinion. Matter of fact, it was so good we did not eat the crackers with it. Normally, I make cornbread with chili, but with the quinoa in this, adding the extra carbs, I opted out of making cornbread. Crispy tortillas or Frito's would be delicious, we don't normally do those because of David being diabetic I just do not buy chips. We don't eat many and they are too expensive for me to buy and throw out because they would go stale long before we could finish them off.

Yum...this looks delicious! I am a vegetarian and make a meatless chili. But this recipe looks great and I will have to try it. It has a little more pizazz than mine :)

Hi ladycat...so good to see you.
It was delicious! It's definitely a keeper for us. Great flavors and so filling. We had it with a few fritos tonight, awesome good stuff! :)
FYI: I did not add cayenne pepper, still found it quite tasty and spicy for our taste. Love using the quinoa, as I try to incorporate it in as many dishes as I can.
