My daughter introduced me to this recipe a little over a year ago, and it is so darn good, not to mention easy. It's cooked in the crock pot, so no heating up the kitchen or dirtying up a lot of pots and pans. This is so tasty, and it is great for diabetics. David's blood glucose was running low this evening so we made a burrito, which taste very much like Chipotle burrito bowl.
The only thing I change is, I add some other herbs and and a 1/2-1 teaspoon chili powder. You can add the toppings of your choice. In my opinion, avocado and a little sour cream is a must have.
