Busy Week

I've had a busy week. David had surgery yesterday. Getting up at 5 a.m., not my thing these days. When I get up early I don't feel well, my eyes hurt so bad I can't see, not sure why getting up early affects how I feel, but it sure does. He's home now but I have to drive him to all appointments and  there are more meds to buy. :-(

I got home from the hospital today and took an hour nap.

Went to Target and picked up four new prescriptions. Came home and made some black bean and spinach enchiladas, so good. Then made a small apple, raisin, apricot and ginger tart. Absolutely love these. I got hooked on tarts while living in Germany, love their pastries.

Fortunately, I am feeling well enough to be up and can do a few things. Hope it lasts!!!

I read an article about how good it was for your health to drink from a copper mug/glass, so bought this mug today at Target and I must say I LOVE it! Just bought one to see if I would like it, will be buying at least three more of them.

This is so easy to make - sheet of puff pastry (I used half sheet for this one), sliced apple, I like green apples because they are tart, I keep a small crock of soaked raisins with sliced ginger and vanilla in the fridge all the time, they work great for this, just sprinkle a few on top, sprinkle one teaspoon of sugar and some cinnamon on top and dot with a little butter, bake in a 400 degree preheated oven, when done I melt a little apricot jam and then add a couple teaspoons of amaretto and brush on top of tart, including pastry.

 Absolutely delicious!

This is perfect light dessert, not too sweet, since the sweetness comes from the raisins and jam.

A Winter Kind Of Tuesday

Just returned from Hospital Hill from one of my appointments this week. Another one on Friday and two more next week. Then, I hope that will be it for the months. Feeling better since my iron numbers are moving in the right directions. My iron was way below normal, but taking three iron pills a day and it is helping.

My intention is to be whole and well !!!

Since I somehow managed to write my appointment down wrong, we got there three hours early for my appointment. I wasn't keen on sitting at the hospital for three hours, we went to Cheesecake Factory and consumed too many calories. It's time for me to stop eating what I want, I am back to my normal weight and time to get back to eating all the right stuff.

Some pics of Kansas City from inside Cheesecake Factory.

After eating, we headed back to Truman Hospital.

So very THANKFUL for this hospital. Angels work here.

On another note, my favorite author/artist, Nick Bantock is selling some of his work on Etsy. Who would have thought it!? Not me. I have been an avid admirer of his work since the Griffin and Sabine Trilogy. This is a fantasy that becomes real. I have read these books so many times and thought about the characters so much, that they are very real to me. I want to own at least once piece of his art. Just as soon as I get some extra cash I will purchase a piece. If for no other reason, I want my books and a piece of his art to give to my grand-daughter one day. If you have never read any of his books, you are missing out ! Go find a set for sale, buy them and find you a little corner on a quiet afternoon and take a wonderful journey into the lives of Griffin and Sabine. You'll be hooked for life. Griffin and Sabine will become a permanent parts of your heart and soul.

Griffin and Sabine are always waiting for me to pull them off the shelf and reacquaint myself with them.

And here are some of his works of art for sale in his Etsy shop.

Views of KC from Hospital Hill

Some pictures of KC... I took these with my iPhone yesterday evening at the hospital. I wish I had a switch to turn myself on today. I am so drained and mentally exhausted that I really have to force my feet to move. Maybe a crane is needed to pull me out of the house today. One would think after years of doing this, you would get used to it. I never do. If anything, I have panic attacks when I drive by a hospital. Every single muscle in my body tightens when I hear the word.
